Italian Ground Beef With Peas and Onions
One-Pot Ground Beef Stroganoff is loaded with hamburger meat, egg noodles and peas in a creamy sauce. This quick and easy dinner is ready in just 30 minutes!
I have another super easy one dish meal to share with you today, and I'm happy to say it's a real crowd pleaser. Well at least, it pleased my crowd! And that's definitely a good thing because these people can be picky, and they aren't afraid to let me know when they don't like something!
I really didn't have a plan for dinner, so this kind of came together at the last minute. Yes, I admit that I am bad about meal planning in advance. Sometimes, I have a plan, and other times, I just sort of wing it. But hey, at least there's something to be said for a well-stocked pantry, so I guess I have that much going for me, right?
We've been having a ton of chicken lately, so I asked the Hubs to stop on his way home from work and pick up some ground beef. But since it wasn't on sale, he came home with a pound -- one pound for six people, which is doable if you mix it in with other stuff.
Usually, I would have made something Mexican or Italian, but we needed a change. I had a huge unopened bag of egg noodles to work with, so I opted to make an easy stroganoff with ground beef.
I haven't made beef stroganoff in a long time, and I wanted it to be as simple as possible. I grew up on the boxed kind, but this one is made completely from scratch.
And did I mention it only takes about 30 minutes to make? Yeppers!
How to Make One-Pot Ground Beef Stroganoff
One-Pot Ground Beef Stroganoff
One-Pot Ground Beef Stroganoff is made with seasoned ground beef, peas and egg noodles in a tangy, creamy sauce
Prevent your screen from going dark
- 1 pound extra lean ground beef
- ½ cup diced yellow or white onion
- 1 tablespoon chopped garlic
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 teaspoon dried minced onions
- 3 cups water
- 4 cups egg noodles uncooked
- 1 cup frozen peas
- 1 teaspoon Dijon mustard
- 1 cup cream
- ½ cup sour cream

In a large pot or skillet, saute the diced onions in olive oil on medium heat until soft

Add the grown beef, break up with a spoon, and cook until brown

Add the garlic, salt and pepper

Add the water and egg noodles, cover and cook on high heat until noodles are soft

Stir in the peas, minced onions and paprika

Reduce heat to medium, and stir in the cream, sour cream and Dijon mustard

Let simmer until sauce starts to thicken, serve, and enjoy!

A lot of creamy beef recipes call for cream of mushroom soup or beef stock. The Hubs hates mushrooms, and I didn't have any beef stock on hand, so that's why I add both fresh onions and the dried onions, along with the mustard. I think minced onions add a ton of flavor, while the fresh onions add both flavor and texture.
The mustard gives the cream sauce some tang, as well. You can add additional salt and pepper at the end, but there's definitely a lot of flavor here.

This one-pot ground beef stroganoff was a big hit with my crew. Two of the kids asked for seconds, and even my picky teen said it was okay, which means she actually liked it!
